Kale and Broccoli Coleslaw/Salad

You can use a bag of pre-made cabbage and add the rest of the ingredients. Ingredients marked with an * come in the pre-made bag.
Ingredients
*1 c shredded red cabbage
*1 c shredded green cabbage
*½ c shredded carrots
3 c shredded kale
2 c chopped broccoli
¼ c hemp seeds
⅓ c sunflower seeds
⅓ c flaxseeds
3 tbsp extra virgin olive oil
1.5 tbsp apple cider vinegar
2 tsp honey
½ tsp Himalayan Pink salt
½ tsp cracked black pepper
Salads are fun, you can add or delete whatever you like and make it your own.
Optional fun additions
1c black or red grapes
½ c dried cranberries
1c chopped Pears
1 c chopped apples
Now, if you want a more coleslaw feel/flavor to it, make this dressing to go with it.
For the “coleslaw” dressing; I call it the KFC Dressing. It’s not exactly “healthy” but gives it that coleslaw flavor we all love.
KFC Dressing
½ c mayonnaise
⅓ c granulated sugar
¼ c whole milk
¼ c buttermilk
2 ½ tablespoons lemon juice
1 ½ tablespoons apple cider vinegar
½ teaspoon salt
½ teaspoon black pepper
Instructions
Combine the shredded kale, cabbages, carrots, hemp seeds and sunflower seeds in a large bowl. Toss.
In a small, lidded jar, combine the olive oil, apple cider vinegar, honey, salt, and pepper. Shake until the vinaigrette is emulsified.
Kale slaw keeps in the fridge in a tightly sealed container for at least 4 days, and up to a week.
